COCONUT FLOUR PROCESSING
Coconut flour is off-white to cream in color with a slightly nutty flavor. It is rich in protein and fiber. The protein and fiber content depends on the processing method used to produce the flour. Coconut flour can be used in the baking and confectioneries industries to produce several products. Coconut flour can be used to increase the protein and fiber content of food products.
There are two methods used to produce coconut flour.
1) Wet/milk extraction process
2) Dry/oil extraction process
WET/MILK EXTRACTION PROCESSING STEPS
EQUIPMENT: Grater, Grinder, Spinner, Dryer, Milling machine, and Weighing scale.
Grating: Remove the coconut flesh from the shell. Grate the coconut flesh using your grater to reduce the size.
Grinding: Grind the grated coconut using the grinding machine.
Spinning: Spin/press the grounded coconut to extract the milk.
Dryer: Dry the residue obtained after extracting the milk in the dryer to reduce the moisture content.
Milling: Mill the dry residue into fine coconut flour.
Cooling: Cool milled coconut flour before packaging to reduce the heat generated as a result of milling.
Packaging: Weigh a quantity of coconut flour into packaging materials i.e. plastic bag or paper bag. Seal bags and label bags.
Coconut flour produced from wet/milk extraction process contains high fiber content.
DRY/OIL EXTRACTION PROCESSING STEPS
EQUIPMENT: Grater, Dryer, Expeller, Milling machine and Weighing scale
Grating: Remove coconut flesh from the shell. Grate coconut flesh into smaller sizes.
Drying: Dry the grated coconut in the dryer to give copra.
Expelling: Extract oil from copra (Dried Coconut flesh) with the expeller.
Drying: Dry the residue after extracting oil from dried coconut flesh.
Milling: Mill the dried residue into coconut flour.
Cooling: Cool milled coconut flour before packaging to reduce the heat generated as a result of milling.
Packaging: Weigh a quantity of coconut flour into packaging materials i.e. plastic bag or paper bag. Seal and label bags.
Coconut flour produced from dry/oil extraction process is rich in protein.

COCONUT (Cocos nucifera)
We will be looking at coconut as a raw material to other food products that can bring in money. There are a lot of business opportunities in processing coconut.
I finally found out that coconut which I have thought before now is a nut is not a nut but a drupe (stone fruit). Coconut is a member of the family Arecaceae (Palm Family).
Coconut is very nutritious. It contains carbohydrate, fat, protein, vitamin c, vitamin B-6, sodium, potassium, calcium, manganese, iron, phosphorus, and zinc.
Coconut a cash crop can be found in large quantities from Lagos, Cross- River, Rivers, Bayelsa, Delta, and Akwa-Ibom,
The following food products can be produced from coconut:
Coconut flour
Virgin coconut oil
Coconut Milk
Coconut chips/flakes
Coconut yoghurt

YAM FRIES PROCESSING
YAM FRIES.
I am sure you have heard of potatoes fries; what about yam
fries? Do you know that processing yam fries can be a very good business idea? Yes yam fries.To produce yam fries you need equipment such as automated
cutting/ slicing machine, cold rooms, freezers, per boiler, bowls and knives.

Peeling
Peel manually using
knives. Peel under water. Peeled yam
must constantly be placed in water this is to prevent enzymatic browning

Slice yam into uniform size strips

Freeze packaged yam

Note: Packaged yam fries should always be kept in the cold room
or freezers and transported in a cooling van.
Yam fries can be sold to supermarkets, restaurants, Caterers,
hotels and boarding schools. Yam Fries can also be exported to other countries.

POUNDED YAM INSTANT FLOUR (POUNDO YAM) PRODUCTION
Pounded yam instant flour commonly known as poundo yam, is used to prepare pounded yam. I love pounded yam
especially when it is served with egusi and vegetable soup. Thanks to
technology we don’t have to go through the stress of pounding yams
using mortar and pestle before we can eat our favorite pounded yam. All we need
to do is step into a store and buy pounded yam instant flour (poundo yam). This
is also a great business opportunity for entrepreneurs and investors.
The variety of yam used in pounded yam instant flour (poundo yam) production is white yam. It has to be white yam.
Equipments used for pounded yam instant flour processing are: slicing Machine, per boilers, dryers (cabinet/flash), milling machine (hammer
mill with cyclone), sifting machines, sealers, packaging machines, bowls, knives, scoops and weighing scale.

YAM (Dioscorea spp).
Yam as we may already know is root and tuber. There are
various varieties of yam, the popular species in Nigeria are
White yam (Dioscorea rotundata)
Water yam (Dioscorea
alata)
Yellow yam (Dioscorea cayensis)
Bitter yam (Dioscorea dumetorum).
Yam is a rich source of water, Carbohydrate, vitamin B
complex, vitamin C, Calcium, Phosphorus, Potassium, Manganese, Essential amino
acid such as Phenylalanine and Threomine.
Yam a raw material to other food products can be source in
large quantities from the following states in Nigeria: Benue, Niger, Taraba, Nasarawa, Kogi, Oyo, Ondo and Delta.
Yam Flour (Elubo), Instant pounded yam flour (Poundo yam
flour), Yam fries are major food products that can be gotten from processed
yam.
YAM FLOUR
Yam flour (off white fine flour) also known as Elubo is used
to prepare Amala. Amala is mostly consumed by the Yoruba people from the south-west
of Nigeria.
Yam known as Ikokoro and white yam are the major raw
material used in yam flour production. Physically damage yams can also be used
to prevent food wastage/food loss.
Equipment used for yam flour processing are: Slicing
Machine, Per-boilers, Dryers (Cabinet/Flash), milling machine (Hammer mill with
cyclone), sifting machines, sealers, packaging machines, bowls, knives, scoops and weighing scale.
